As with any other video game, the first thing that you need to know about parrying is that timing is extremely important.

The first thing that you need to know is that if you’re waving your knife the entire time – you cannot parry. And if you keep spamming the knife button, that won’t work either. Your knife has to be drawn at the right moment for parrying to work.

So, what you need to do is to press the knife button as soon as an enemy attack is about to hit you. You might not get it right the first couple of times, but you’ll know when it works and eventually get used to it.
